Bacon-Wrapped Sweet Potato Chips

Time for another round of “I wonder what else I can wrap in bacon…” This time we’re doing one of my favourites: sweet potato chippies!


2 sweet potatoes (R15)

1 pack of bacon (R23)

1 tbsp. olive oil

1. Preheat your oven to 220.

2. Slice your sweet potato into chips. Don’t worry if they’re not equal – sweet potato is very forgiving.

3. Wrap each chip with bacon. 1 slice of bacon should be enough to go around 2 chips. Place them in an oven tray lined with baking paper for easy cleaning. (Note: image below shows a half batch, you will get more. If you run out of bacon, just throw the sweet potato chips in on their own.)

4. Drizzle the olive oil over the parts of the chips not covered in bacon and pop them in the oven for 15-20 minutes, or until the bacon is crispy and the chips are browning around the edges.

Serving suggestion:

These are great as a side to any meal. I had them with some lamb chops that I fried in salt, pepper and olive oil but they also go great with a simple salad.
