Almond-Flaked Zucchini Fries

Ingredients:

500g baby marrow/zucchini (R15)

1 egg (R2)

100g ground almonds (R38)

1 tbsp. olive oil

Salt to taste.

Portions: Serves 3 as a side to a main dish.

Method:

1. Cut your zucchini into chips. I cut them in half, and then into quarters for fuller chips.

2. Beat your egg in a bowl.

3. Place your ground almonds in a separate bowl.

4. Dip each chip into the egg, then into the ground almonds.

5. Fry in a pan with your olive oil on a medium to high heat – be careful not to burn the almonds. It usually takes 2minutes per side, flipping your chips half way.

Serving suggestions:

Serve as a side to any dish, or even on their own with some home-made tomato sauce. I served mine with bacon and jalapeño meatballs. (Recipe coming soon!)
